Every ski manufacture has a recommended bevel setting. But more importantly is your personal perference. I set my ski at 2 degree side and 1 degree base. I think the most common settings for recreational skiers are 2 or 3 side and 1 base.
I prefer to use a guide then a multi edge tool. Money wise, those multi-edge tool always include a small file but these small file usually wears a lot faster then a heat treated mill file, but you have to buy a guide which may cost a little more. Also you can 'feel' the cutting action better with guide since your finger can rest directly on top of the file or stone that you're using. I've been using the Kuu bevel guide, inexpensive, cost only around $40. Of course compare to those expensive guide it has a draw back. The aluminum body is less durable then a solid stainless steel guide. But with proper care it can easily last for a few years.
